Chocolate Peanut Butter Energy Bites
Dates sweeten these chocolate peanut butter energy bites for a refined-sugar-free, guilt-free mid-afternoon pick me up.

Serves: 2 dozen bites
  • 1 cup dates (make sure they're pitted!)
  • 1 cup old fashioned oats
  • ½ cup peanut butter (smooth or chunky)
  • ½ cup ground flax meal
  • ½ cup unsweetened coconut flakes
  • ¼ cup cocoa powder
  • 1 tsp vanilla
  1. Place dates in bowl of food processor and pulse 3 times or until dates are roughly chopped. Scrape dates down the edges of the bowl and barely cover in very hot water (probably ½ to 1 cup). Let sit for 10 minutes or until dates are slightly softened. Pour off any water that remains.
  2. Add remaining ingredients and process until mixture forms a ball, 2 minutes or so (you may need to break it up slightly and process again if the ingredients are not well distributed). Form into 1" balls with a cookie scoop. Alternatively, you can pat the mixture into a ½" thick square, let dry for 15-20 minutes, and then cut into bars.
